Vegan Beef-less ground beef dirty rice stuffed peppers

​Ingredients
  • 1 pack of Trader Joes Beef-less ground beef ( or any brand of your choice)
  • 1 pack Green peas (Add as much as you like)
  • 4-5 C cooked Jasmine rice, prepared with vegetable broth
  • 2 C vegetable broth
  • 3/4 C yellow onion, diced
  • 1/4 C celery, diced
  • 3 bay leaves
  • 2 Tbsp fresh parsley, chopped
  • 1 Tbsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp minced garlic
  • 1 1/2 tsp salt (if desired adjust to your liking)
  • 1 tsp chili powder
  • 1/2 tsp ground black pepper
  • 1Tbsp grape seed oil
  • 1 Tbsp Cajun seasoning
  • 1/4 tsp cayenne pepper
  • 5 bell peppers cut in halves and seeds taken out


Instructions
  • In a large skillet, heat grapeseed  oil.  Add Soy Chorizo.
  • As beef-less ground beef begins to cook down add diced onion ,celery and  green peas for 5-8 mins
  • Stir in herbs and spices except for parsley.  Mix well.  
  • Add  bay leaves.  Scrape the bottom of the pan to loosen any of the browned bits from the pan. Add a little vegetable broth to help.  
  • Fold in rice
  • Drizzle olive oil on cut Bell peppers.
  •   Stuff peppers  and put into oven for  10-15 more minutes.
  • Take out of oven sprinkle a parsley on top and Serve.
